We invite you to share in

the aromas and flavours of Saltare. We started in 2003 when Carla decided it was time to begin experimenting with her favourite wine: méthode champagnoise, or sparkling wine which has undergone secondary fermenting in the bottle. Our MCC range

consists of the Brut Nature, which spends 18-24 months in the bottle and the Brut Reserve, with 36-48 months on the lees. For a month each year we have available our very limited Brut Rosé and Brut Blanc de blancs. The dates of bottling and disgorgement are printed on each label so you can see exactly how long it spent on the lees. We have also released our latest Chenin blanc (2011) and our first Old Vines Chenin blanc (2011). The Syrah 2009 is shaping up to be a spectacular wine and our popular Bordeaux blend (2008) called "the secret" (Specialis) is also currently available. All these wines are made in very limited quantities, which means they get all the attention they deserve. Read more about our range of wines by following The Wines above.

The magical process

of making a sparkling wine according to the French method is filled with romance and myth. Of course, the actual process requires a lot of hours, passion, patience and respect for nature's own way. Fortunately we have very enthusiastic friends who help us start each vintage on a lively and energetic note. See how we make our wines by following The Season above.

Many people ask us

"Where is Saltare?" We live in Stellenbosch, the heart of South Africa's wine region. We are fortunate to live on a rose farm overlooking the Simonsberg. We make the wine in rented cellar space where it suits our needs best. Carla Pauw, a qualified winemaker and consultant for a number of wineries in the area, selects grapes from vineyards across the Western Cape. These grapes express aromas and flavours that she cherishes. After the grapes are handpicked we transport them to the cellar and the process of drawing out the juice and nurturing it to its best potential can start.
